Utiel-Requena continues its training programs for the local restaurant industry with a course on serving and tasting rosé wines

The Utiel-Requena Designation of Origin (DO) has offered a new training course for local restaurants on the service and tasting of rosé wines from new vintages, led by sommelier Manuela Romeralo in collaboration with the Tourism Center and the Tierra del Vino Association of Municipalities.

Participants were able to discover 22 rosés of different styles and vintages. These wines reflected the variety of rosés in the Utiel-Requena DO: different tones, colors, intensities, and nuances of aromas; more traditional and more modern styles; wines aged on lees or in amphorae, or fermented in barrels, all with an eye toward aging potential. The organoleptic characteristics were also analyzed, putting the participants’ senses to the test through tasting.

During the two sessions of the course, Bobal rosés took center stage, as it is our native grape variety. Single-varietal rosés from the Utiel-Requena Designation of Origin were analyzed, as well as several interesting blends with Merlot, Garnacha, Tempranillo, and Tardana grapes. Some Cabernet Sauvignon and Pinot Noir rosés also stood out, including one sweet version.

The tastings, as a whole, reflected the great diversity, versatility, and possibilities that the rosé wines of the Utiel-Requena Designation of Origin (DO) offer to their clients and businesses.

These training sessions are organized annually for the region’s restaurants, considered ambassadors of the Utiel-Requena DO. In addition to the rosé wines, they also had the opportunity to learn about the new wines selected to represent the DO in 2026.

This ongoing initiative builds on the successful training held last year, also focused on the rosé wines of the Utiel-Requena DO. For this edition, Romeralo’s interest lay in keeping track of the different vintages of the rosé wines in order to highlight this product, so emblematic of the Utiel-Requena DO, and to promote its consumption, especially among younger consumers. Thanks to the combination of excellent service and perfect pairings, they convey the rich winemaking heritage of our region to their customers every day.
